The anaerobic process is something that we are really excited for and we are so glad that we get to share this super unique coffee with all of you!
Once the coffee has been depulped it’s added with the mucilage in a fermentation tank that is hermetically sealed. At the beginning there is some oxygen but CO2 builds and fills the container. During the fermentation period the mucilage is broken down over 18 to 24 hours in the tank, then the coffee is taken out and sun-dried.
It’s a unique processing method but comparable to a honey process stuck in a fermentation tank. The cinnamon flavor is very unique to this processing method and is something we love last time we had to Costa Rica anaerobic last year.
