This certified fair-trade organic coffee comes from heirloom cultivars of coffee plants grown at high altitudes in nutrient-rich volcanic soil. Under Carlo's meticulous care, this coffee shines with hints of passion fruit, pink lemonade, and plum.

Jimmy's Notes:

Bright, loud, and sweet. This washed Colombian hits you with passionfruit and plum and the brightness comes on like pink lemonade. I first roasted this coffee with a bit more development and for a more rounded, contrasting sweetness but, where I found it really shines is with a faster light roast where the acidity and brightness really come out. 

At higher ratios and extractions, expect a bright, punchy coffee that does not hold back and is meant to be enjoyed without any sugar or milk, it is sweet on it's own and milk will likely curdle due to the acidity.
